Tarte Flambee!

Finally, one of my main objectives was to seek out a good Tarte Flambee, a dish I originally found in Strasbourg on a trip to France, and perhaps my favorite dish of all.

The search was good taken as a whole despite the fact that the Tarte I had had a few flaws. It was properly composed, but the crust was a little tough, and the onions were sliced a little thick. Note: I always compare them to the standards I learned in France where they are almost always the same and excellent. The really good part was talking at length to the cook and proprietor who were impressed by my knowledge and the pictures I showed them of “Tartes Flambees I Have Known” :-) They were very nice. I also got two of the ingredients I was seeking there: Creme Fraiche and Fromage Blanc. (I got the other ingredient [Lardons] at an IGA grocery store outside Montreal.) See the last slide.
